Strength Salad


If you love hearty, protein rich salad that will help power you through the day - this is one of my favorites. It’s flavorful, simple, and supplies a nice dose of vegan protein that will keep you feeling satisfied and give you sustained energy.

INGREDIENTS: (For 1 salad)

  • 2 handfulls mixed greens (spinach. lettuces, arugula

  • 1/4 cup cooked lentils

  • 1/4 cup quinoa

  • sprinkle of feta cheese

  • 1 radish, sliced

  • half cucumber, sliced

  • 1/2 avocado, sliced or cubed

  • 2-6 kalmata olives, sliced

  • sprinkle fresh cliantro, torn in pieces

  • Annie’s Green Goddess dressing to taste
